Cocktail French Onion Tarts

Total Time: 1 hr 15 mins Preparation Time: 1 hr Cook Time: 15 mins

Ingredients

  • 2 large vidalia onions, minced fine in food processor
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1 bay leaf, crumpled to release flavor but still whole
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1 teaspoon and sea salt
  • 1 tablespoon sherry wine or 1 tablespoon marsala
  • 1 sheet frozen puff pastry, thawed and rolled thin

Recipe

  • 1 put oil in skillet and saute' onions and garlic. add seasonings and sherry, voer, and simmer on very low heat for 45 minutes, or until mixture is very soft and thick.
  • 2 roll out dough and cut with 2" biscuit cutter. press into miniature muffin tin, fill with 2 tsp onion puree, sprinkle with poppy seeds, and bake at 350 until browned.
