Low Carb Crock Pot Fajitas

Ingredients
- Servings: 4
- 4 green peppers
- 2 red peppers
- 1 large onion
- 4 boneless center cut lamb chops
- 4 lean flank steak
- 1 (1 1/4 ounce) package fajita seasoning mix
- garlic
- salt
- pepper
- 2 cups four-cheese mexican blend cheese
- taco sauce
Recipe
- 1 cut steak and lamb into strips. (i simply cut mine in half since you're not putting these on tortillas).
- 2 coat meat strips in olive oil.
- 3 chop veggies into thick strips.
- 4 place lamb chops on the bottom of crockpot, salt and pepper.
- 5 place steak on top of lamb chops, salt and pepper.
- 6 place onions and peppers on top and again, salt and pepper.
- 7 cook on low to medium heat for 3 hours.
- 8 stir all ingredients together and add garlic to taste and fajita seasonings.
- 9 continue to cook on medium to high heat for approximately 30 minutes.
- 10 serve with shredded cheese and taco sauce on the side.
