Low Carb Crock Pot Fajitas

Total Time: 3 hrs 35 mins Preparation Time: 5 mins Cook Time: 3 hrs 30 mins

Ingredients

  • Servings: 4
  • 4 green peppers
  • 2 red peppers
  • 1 large onion
  • 4 boneless center cut lamb chops
  • 4 lean flank steak
  • 1 (1 1/4 ounce) package fajita seasoning mix
  • garlic
  • salt
  • pepper
  • 2 cups four-cheese mexican blend cheese
  • taco sauce

Recipe

  • 1 cut steak and lamb into strips. (i simply cut mine in half since you're not putting these on tortillas).
  • 2 coat meat strips in olive oil.
  • 3 chop veggies into thick strips.
  • 4 place lamb chops on the bottom of crockpot, salt and pepper.
  • 5 place steak on top of lamb chops, salt and pepper.
  • 6 place onions and peppers on top and again, salt and pepper.
  • 7 cook on low to medium heat for 3 hours.
  • 8 stir all ingredients together and add garlic to taste and fajita seasonings.
  • 9 continue to cook on medium to high heat for approximately 30 minutes.
  • 10 serve with shredded cheese and taco sauce on the side.
