Italian Pasta Stir-fry

Ingredients
- Servings: 6
- 8 ounces linguine, uncooked
- 2 medium tomatoes, seeded and chopped
- 1 medium onion, chopped
- 1 medium zucchini, sliced
- 1/4 cup snipped fresh parsley
- 1 tablespoon olive oil
- 2 cloves garlic, pressed
- 1 teaspoon dried basil
- 1 teaspoon oregano leaves
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/4 cup grated fresh parmesan cheese
Recipe
- 1 cook linguine according to package directions.
- 2 drain and keep warm.
- 3 chop tomatoes and onion.
- 4 slice zucchini.
- 5 snip parsley.
- 6 heat oil in a stir-fry skillet over medium heat until hot.
- 7 add pressed garlic to skillet; stir-fry for 15 seconds.
- 8 add zucchini and onion; stir-fry 2-3 minutes or until vegetables are crisp-tender.
- 9 add tomatoes, parsley and seasonings.
- 10 heat 1-2 minutes, stirring gently until heated through.
- 11 remove from heat.
- 12 stir in linguine.
- 13 grate parmesan cheese over pasta.
- 14 serve immediately.
