Italian Pasta Stir-fry

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 8 ounces linguine, uncooked
  • 2 medium tomatoes, seeded and chopped
  • 1 medium onion, chopped
  • 1 medium zucchini, sliced
  • 1/4 cup snipped fresh parsley
  • 1 tablespoon olive oil
  • 2 cloves garlic, pressed
  • 1 teaspoon dried basil
  • 1 teaspoon oregano leaves
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup grated fresh parmesan cheese

Recipe

  • 1 cook linguine according to package directions.
  • 2 drain and keep warm.
  • 3 chop tomatoes and onion.
  • 4 slice zucchini.
  • 5 snip parsley.
  • 6 heat oil in a stir-fry skillet over medium heat until hot.
  • 7 add pressed garlic to skillet; stir-fry for 15 seconds.
  • 8 add zucchini and onion; stir-fry 2-3 minutes or until vegetables are crisp-tender.
  • 9 add tomatoes, parsley and seasonings.
  • 10 heat 1-2 minutes, stirring gently until heated through.
  • 11 remove from heat.
  • 12 stir in linguine.
  • 13 grate parmesan cheese over pasta.
  • 14 serve immediately.
