Italian Chicken Au Gratin

Ingredients

- 1 teaspoon olive oil
- 1 large onion, chopped
- 5 garlic cloves, chopped
- 1 lb chicken tenders, cut in to bite size pieces
- 2 (15 ounce) cans black beans, rinsed and drained
- 1/2 cup low sodium chicken broth
- 1 (16 ounce) can diced tomatoes with juice
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 8 ounces frozen spinach
- 4 ounces mozzarella cheese, grated
Recipe
- 1 in a large ovenproof pan, saute onion and garlic in olive oil on medium heat until tender.
- 2 add chicken pieces and stir occasionally until nearly cooked through.
- 3 add tomtaoes, beans, chicken broth, and seasonings. cook, stirring occasionally, until chicken is cooked through.
- 4 add frozen spinach, cover dish and continue cooking on medium heat until spinach is hot.
- 5 let simmer for 5 minutes.
- 6 sprinkle with shredded mozzarella and place under broiler until cheese is melted, bubbly, and lightly browned, about 5 minutes.
