Guacamole Rotel

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 hass avocadoes
  • 1/2 medium onion, chopped
  • 1 serrano pepper, minced
  • 1 garlic clove, minced
  • 1 (10 ounce) can rotel tomatoes & chilies, drained
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Recipe

  • 1 cut avocados in half, remove pit and scoop out pulp; place in medium size bowl along with onion, pepper and garlic.
  • 2 mash the avocado and stir in drained rotel tomatoes and green chili, sprinkle with lemon juice, stir, adjust seasoning to taste and serve.
