Flat Bread Chicken Quesadilla

Ingredients
- Servings: 4
- 4 slices flat bread (i use flatout brand)
- 2 chicken breasts, chopped into small pieces
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 onion, chopped
- 2 tablespoons fajita seasoning mix
- 2 cups low-fat cheese, shredded
Recipe
- 1 saute chicken in a little olive oil until no longer pink inside.
- 2 add peppers, onion and fajita seasoning to chicken and saute until veggies are tender.
- 3 spray both sides of flatbread with cooking spray.
- 4 on one rounded half of the flatbread, spread the quesadilla mixture.
- 5 fold over.
- 6 cook each side for 2-3 minutes in a saute pan.
- 7 remove from pan and serve with sour cream, salsa or ranch dressing.
