Italian Eggplant And Ground Buffalo

Ingredients

  • Servings: 2
  • 1 lb ground buffalo meat
  • 1 eggplant, cubed
  • 1 sweet onion, cut in half, then sliced
  • 1 red bell pepper, cut in half, then 1/2 inch strips
  • 6 garlic cloves, minced
  • 1 large tomato, diced
  • 4 tablespoons olive oil
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon italian seasoning
  • salt
  • 1/2 cup fresh grated parmesan cheese

Recipe

  • 1 heat oil in large pan over med-high heat
  • 2 saute eggplant, pepper, onion until soft.
  • 3 stir in garlic, cook 1 minute.
  • 4 stir in buffalo, cook until almost done.
  • 5 stir in tomatoes and seasonings and cook until meat is done.
  • 6 spoon into bowls and sprinkle parm on top.
