Italian Eggplant And Ground Buffalo

Ingredients

- 1 lb ground buffalo meat
- 1 eggplant, cubed
- 1 sweet onion, cut in half, then sliced
- 1 red bell pepper, cut in half, then 1/2 inch strips
- 6 garlic cloves, minced
- 1 large tomato, diced
- 4 tablespoons olive oil
- 1/2 teaspoon dried basil
- 1/2 teaspoon italian seasoning
- salt
- 1/2 cup fresh grated parmesan cheese
Recipe
- 1 heat oil in large pan over med-high heat
- 2 saute eggplant, pepper, onion until soft.
- 3 stir in garlic, cook 1 minute.
- 4 stir in buffalo, cook until almost done.
- 5 stir in tomatoes and seasonings and cook until meat is done.
- 6 spoon into bowls and sprinkle parm on top.
