Low Carb Squash Casserole

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 lb yellow squash (2-3 med)
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1/2 cup mayonnaise
  • 1 cup shredded cheese
  • 1 egg
  • nature's seasoning

Recipe

  • 1 steam squash onion and garlic.
  • 2 in food processor mix mayo, cheese and egg.
  • 3 add squash, natures seasoning and blend.
  • 4 pour into a greased quart sized casserole dish.
  • 5 top with additional shredded cheese.
  • 6 bake at 350 for 40 minute.
