Herbed Lamb Medallions

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs lamb tenderloin
  • 2 tablespoons margarine, melted
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne
  • 1 tablespoon honey

Recipe

  • 1 cut lamb into 1/2-inch slices and pound to flatten.
  • 2 combine butter and garlic powder, brush over lamb. combine seasonings and sprinkle over top.
  • 3 place in 2 greased cookie sheets and broil 4-6 inches from the heat for 5 minutes. turn and broil 3 minutes longer.
  • 4 brush with honey and broil for another minute or until meat juices run clear.
