Chickpea Tacos

Total Time: 17 mins Preparation Time: 10 mins Cook Time: 7 mins

Ingredients

  • 1 teaspoon olive oil
  • 1 garlic clove, minced
  • 1/4 red onions or 1/4 yellow onion, minced
  • 1 1/2 cups cooked chickpeas (or 14-oz can, drained and rinsed)
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cornstarch
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup water
  • 6 hard taco shells or 6 medium tortillas
  • 1/2 recipe simple guacamole
  • chopped cilantro
  • lime wedge

Recipe

  • 1 in a small bowl, combine all taco seasoning ingredients, including water.
  • 2 in a large pan, heat olive oil over medium heat. once shimmering, add the garlic and onion and saute until onion is soft, 3-4 minutes.
  • 3 pour in chickpeas and taco seasoning and stir to combine. saute, stirring occasionally, until chickpeas are heated through and some of the water is evaporated, 2-3 minutes. don't over cook or the chickpeas will be come dry.
  • 4 serve in taco shells along with the guacamole, cilantro and lime wedges.
