Apricot-glazed Lamb Loin

- 3 -3 1/2 lbs boneless lamb loin
- seasoning salt
- 1 (16 ounce) jar apricot preserves
- 1 1/2 teaspoons balsamic vinegar
- 1 1/2 teaspoons rice wine vinegar
- 4 tablespoons water
Recipe
- 1 preheat oven to 325 degrees.
- 2 moderately season lamb loin with seasoning salt.
- 3 place lamb loin in baking dish.
- 4 add 1/4-inch water to baking dish for moist baking.
- 5 prepare glaze by blending apricot preserves, balsamic vinegar, rice wine vinegar and water in food processor until smooth.
- 6 using basting brush, coat lamb loin with glaze, reserving some glaze.
- 7 bake in preheated oven 1 1/2 to 2 hours, or until lamb is tender and juices run clear.
- 8 halfway through baking, brush lamb with remaining glaze.
- 9 lamb should be baked to an internal temperature of 165 degrees.
