Jamaican Lamb Stir-fry

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 (16 ounce) package stir fry vegetables (frozen)
  • 16 ounces boneless lamb chops (cut into thin strips)
  • 2 teaspoons jamaican jerk spice
  • 1 cup bottled plum sauce
  • peanuts (optional)

Recipe

  • 1 in a wok or large skillet, heat oil over medium-high heat.
  • 2 add frozen vegetables; cook and stir for 5 - 7 minutes or until vegetables are crisp-tender.
  • 3 remove vegetables from wok and place in a covered serving dish.
  • 4 toss lamb strips with jerk seasoning; add to wok.
  • 5 add more oil, if necessary.
  • 6 cook and stir for 2 - 5 minutes or until lamb is no longer pink.
  • 7 add plum sauce to wok; return vegetables.
  • 8 gently toss to coat; heat through.
  • 9 if desired, sprinkle with peanuts.
  • 10 serve over rice.
