Jamaican Lamb Stir-fry

Ingredients

- 1 tablespoon olive oil
- 1 (16 ounce) package stir fry vegetables (frozen)
- 16 ounces boneless lamb chops (cut into thin strips)
- 2 teaspoons jamaican jerk spice
- 1 cup bottled plum sauce
- peanuts (optional)
Recipe
- 1 in a wok or large skillet, heat oil over medium-high heat.
- 2 add frozen vegetables; cook and stir for 5 - 7 minutes or until vegetables are crisp-tender.
- 3 remove vegetables from wok and place in a covered serving dish.
- 4 toss lamb strips with jerk seasoning; add to wok.
- 5 add more oil, if necessary.
- 6 cook and stir for 2 - 5 minutes or until lamb is no longer pink.
- 7 add plum sauce to wok; return vegetables.
- 8 gently toss to coat; heat through.
- 9 if desired, sprinkle with peanuts.
- 10 serve over rice.
