Greek Lentil Stew

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • cooking spray
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 teaspoons minced garlic
  • 2 cups peeled and diced potatoes
  • 1 cup lentils, washed and sorted
  • 1 (14 ounce) can diced tomatoes
  • 3 cups vegetable stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried mint
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1 medium zucchini, sliced
  • 1/2 lb green beans, trimmed
  • salt and pepper

Recipe

  • 1 spray a large saucepan with cooking spray; heat over medium heat until hot.
  • 2 sauté onion, bell pepper and garlic until tender, about 5 minutes.
  • 3 add potatoes, lentils, tomatoes, stock and seasonings; heat to boiling. reduce heat and simmer, covered, until lentils are tender, about 25 minutes.
  • 4 add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. season to taste with salt and pepper.
