Greek Lentil Stew

Ingredients

- cooking spray
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 2 teaspoons minced garlic
- 2 cups peeled and diced potatoes
- 1 cup lentils, washed and sorted
- 1 (14 ounce) can diced tomatoes
- 3 cups vegetable stock
- 1 teaspoon dried oregano
- 1 teaspoon dried mint
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1 medium zucchini, sliced
- 1/2 lb green beans, trimmed
- salt and pepper
Recipe
- 1 spray a large saucepan with cooking spray; heat over medium heat until hot.
- 2 sauté onion, bell pepper and garlic until tender, about 5 minutes.
- 3 add potatoes, lentils, tomatoes, stock and seasonings; heat to boiling. reduce heat and simmer, covered, until lentils are tender, about 25 minutes.
- 4 add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. season to taste with salt and pepper.
