Gala Salmon Roll

Ingredients
- 1 (15 1/2 ounce) can red salmon
- 1 (8 ounce) package cream cheese, softened
- 1 tablespoon fresh lemon juice
- 2 teaspoons grated yellow onions
- 1 teaspoon prepared horseradish
- 1/4 teaspoon bottled liquid smoke seasoning or 1/4 teaspoon worcestershire sauce
- 1/2 cup chopped pecans
- 3 tablespoons minced fresh parsley, plus sprigs of fresh parsley for garnish

Recipe
- 1 drain the salmon and flake the meat with a fork.
- 2 combine the salmon, cream cheese, lemon juice, onion, horseradish, and liquid smoke in a large bowl and stir well.
- 3 chill for several hours or overnight.
- 4 place the salmon mixture on a serving platter and shape it into a log.
- 5 combine the pecans and parsley in a small bowl.
- 6 roll the log in the pecan mixture, pressing excess into the sides.
- 7 chill several hours.
- 8 serve on a platter surrounded by the sprigs of parsley and crackers.
