Gala Salmon Roll

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1 (15 1/2 ounce) can red salmon
  • 1 (8 ounce) package cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons grated yellow onions
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon bottled liquid smoke seasoning or 1/4 teaspoon worcestershire sauce
  • 1/2 cup chopped pecans
  • 3 tablespoons minced fresh parsley, plus sprigs of fresh parsley for garnish

Recipe

  • 1 drain the salmon and flake the meat with a fork.
  • 2 combine the salmon, cream cheese, lemon juice, onion, horseradish, and liquid smoke in a large bowl and stir well.
  • 3 chill for several hours or overnight.
  • 4 place the salmon mixture on a serving platter and shape it into a log.
  • 5 combine the pecans and parsley in a small bowl.
  • 6 roll the log in the pecan mixture, pressing excess into the sides.
  • 7 chill several hours.
  • 8 serve on a platter surrounded by the sprigs of parsley and crackers.
