Florida Tomato Basil Linguini

Total Time: 55 mins Preparation Time: 40 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 lbs of ripe tomatoes
  • 3 teaspoons garlic, minced
  • 1/2 bunch fresh basil, hand torn
  • 1/2 cup olive oil
  • 1 lemon, zested and juiced
  • 1 lb linguine
  • parmesan cheese, grated
  • salt and pepper

Recipe

  • 1 wash and rinse tomatoes.
  • 2 dry tomatoes, then core and cut in half. use a spoon to remove most of the seeds. chop tomatoes coarsely.
  • 3 add chopped tomatoes to a colander, sprinkle with a few pinches of salt, and let them sit so they can release some of their water. this should only take a half an hour and can be done ahead of time.
  • 4 combine drained tomatoes, olive oil, lemon juice, lemon zest and garlic into a large sauté pan. heat tomato mixture over low heat and warm the mixture do not cook it.
  • 5 cook and drain pasta according to its directions.
  • 6 combine pasta and tomato mixture together.
  • 7 add fresh basil and parmesan.
  • 8 taste for seasoning and adjust salt and fresh ground pepper.
