Jambalaya

Ingredients

  • Servings: 8
  • 1 lb chicken breast (skinless, boneless and cut into 1 inch cubes)
  • 1 lb smoked sausage, cut into 1/2 inch slices
  • 1 lb fresh tomato, diced
  • 3 celery ribs, chopped
  • 1 small onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 cup low sodium soy sauce
  • 1 tablespoon creole seasoning
  • 4 bay leaves
  • 1 lb shrimp (frozen cooked, thawed and peeled)
  • 3 cups rice, cooked

Recipe

  • 1 in a slow cooker, combine chicken, sausage, tomatoes, celery, onion, green pepper, soy sauce, creole seasoning, and bay leaves.
  • 2 cover and cook on low for 7 hours.
  • 3 stir in shrimp and rice and cook until heated through.
