Hedgiehog's Greek Flavoured Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 cup rice (i prefer to use basmati)
  • 1 1/2 cups good quality chicken broth
  • 1/4 cup chickpeas
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon all purpose greek seasoning
  • 1/4 teaspoon cumin

Recipe

  • 1 heat the olive oil in a pan and add garlic and rice; cook until rice is a bit brown.
  • 2 add all other ingredients and bring to the boil.
  • 3 reduce heat to medium low; cover and let cook for 20 minutes.
  • 4 fluff with a fork and serve.
