Healthy Whole Wheat Bagels (vegan)

Total Time: 1 hr 27 mins Preparation Time: 1 hr 15 mins Cook Time: 12 mins

Ingredients

  • 2 cups whole wheat flour
  • 1 3/4 cups bread flour
  • 2 tablespoons vital gluten
  • 1 1/4 cups soymilk
  • 1 egg substitute (either a 'flax egg' or an egg replacer)
  • 2 tablespoons butter, vegan (i like earth balance buttery sticks)
  • 1/4 cup brown sugar (or more if you like a sweeter bread)
  • 1 1/4 teaspoons active dry yeast
  • 1/2 teaspoon salt

Recipe

  • 1 put all ingredients in the bread machine pan.
  • 2 select dough setting.
  • 3 when machine is done cycling, turn out onto wax paper or a floured surface.
  • 4 pull dough apart and shape into bagels, about softball size.
  • 5 place them on a greased baking sheet far apart as they will rise.
  • 6 brush with olive oil. you can also top with any seasonings you like at this point.
  • 7 cover and let rise about one hour. they may double in size.
  • 8 bake at 350 degrees for 9-12 minutes or until golden brown.
