Ingredients
- Servings: 4
- 3 tablespoons harissa
- 2 small lemons, zest and juice
- 4 1/2 tablespoons olive oil
- 2 teaspoons honey
- 1/2 teaspoon ground cumin
- salt and pepper
- 7 ounces pearl barley, cooked according to pack instructions, cooled
- 1 red onion, finely sliced
- 2 oranges, peeled and segemented
- 4 ounces arugula
Recipe
- 1 mix the first 5 ingredients together thoroughly with plenty of seasoning to make the dressing.
- 2 mix the pearl barley with the onion, orange segments and arugula and stir through 4 tbs of the dressing.
- 3 serve.
