Grilled Stuffed Roast Lamb

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 16
  • 4 lbs boneless lamb loin
  • 1 (6 5/8 ounce) box garlic and basil whole wheat couscous
  • 1/2 whole red pepper, diced
  • 1/2 whole yellow pepper, diced
  • mrs. dash lemon pepper
  • mrs. dash garlic and herb seasoning
  • kitchen twine

Recipe

  • 1 prepare couscous according to directions on box
  • 2 add chopped peppers to couscous
  • 3 butterfly lamb loin
  • 4 season lamb loin generously with mrs. dash lemon pepper & mrs. dash garlic herb seasonings
  • 5 spread couscous mixture on lamb loin, leaving a one inch border all the way around the lamb loin.
  • 6 roll up lamb loin securely - tie with kitchen twine
  • 7 season generously on the outside of the loin with mrs. dash lemon pepper and mrs. dash garlic herb.
  • 8 brown on all sides on a very hot grill
  • 9 grill for 90 minutes (or until done according to a meat thermometer) on the grill using the indirect heat method.
