Greek Catfish

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 6 pieces catfish, about 1 1/2 pounds
  • 2 onions, sliced thin
  • 1 tablespoon minced garlic
  • olive oil, about 2 tbs
  • 1 (10 ounce) box frozen spinach, cooked 1/2 way
  • 4 cups diced tomatoes with juice
  • cajun seasoning
  • 1 tablespoon lemon pepper
  • 1 teaspoon oregano
  • lemon (to garnish)

Recipe

  • 1 in a skillet brown catfish and put to the side.
  • 2 in a dutch oven place onions, garlic and olive oil and cook until onions are almost done.
  • 3 add tomatoes and seasoning and cook on medium for 15 minutes or until juices are reduced in half.
  • 4 add spinach to the mixture.
  • 5 add catfish and simmer covered for 10 minutes or until the spinach and catfish are done.
