Greek Catfish

Ingredients
- Servings: 4
- 6 pieces catfish, about 1 1/2 pounds
- 2 onions, sliced thin
- 1 tablespoon minced garlic
- olive oil, about 2 tbs
- 1 (10 ounce) box frozen spinach, cooked 1/2 way
- 4 cups diced tomatoes with juice
- cajun seasoning
- 1 tablespoon lemon pepper
- 1 teaspoon oregano
- lemon (to garnish)
Recipe
- 1 in a skillet brown catfish and put to the side.
- 2 in a dutch oven place onions, garlic and olive oil and cook until onions are almost done.
- 3 add tomatoes and seasoning and cook on medium for 15 minutes or until juices are reduced in half.
- 4 add spinach to the mixture.
- 5 add catfish and simmer covered for 10 minutes or until the spinach and catfish are done.
