Cook Time: 35 mins
Ingredients
- Servings: 4
- 1 broiler-fryer chicken, about 2 1/2 to 3 lbs
- 1/2 teaspoon salt
- 1/2 teaspoon ground cayenne pepper (cayenne)
- 1/2 cup vegetable oil
- 4 tablespoons butter
- 3/4 lb fresh mushrooms, trimmed and finely chopped (about 4 cups)
- 1/4 cup flour
- 2 cups chicken stock
- 1/4 cup pitted green olives, thinly sliced
- 1/4 cup dry sherry
- 1 (10 ounce) package frozen artichoke hearts, freshly cooked
Recipe
- 1 pat the pieces of chicken completely dry with paper towels and season them on all sides with the salt and red pepper. in a heavy 12-inch skillet, heat the oil over moderate heat until a light haze forms above it.
- 2 fry the chicken in the hot oil, starting the pieces skin side down and turning them frequently with tongs for about 20 minutes, or until they brown richly and evenly.
- 3 to be sure that the bird is cooked to the proper degree of doneness, lift a thigh from the pan and pierce it deeply with the point of a small skewer or sharp knife. the juice that trickles out should be clear yellow; if it is still tinged with pink, fry the chicken for 2 or 3 minutes more.
- 4 after all of the chicken pieces are cooked, drain them on paper towels. then arrange them on a heated platter and drape them with foil to keep them warm.
- 5 meanwhile, in another large heavy skillet, melt the butter over moderate heat. when the foam subsides, add the mushrooms and, stirring occasionally, cook for 5 minutes, or until the mushrooms are tender and the liquid that accumulates in the pan has evaporated. do not let the mushrooms brown. remove the pan from the heat and reserve the mushrooms.
- 6 when the chicken has cooked its allotted time and been transferred to the platter, pour off all but about 4 tablespoons of the fat remaining in the skillet and in its place add the flour; mix well. while stirring constantly with a wire whisk, pour in the chicken stock in a slow, thin stream and cook over high heat until the sauce comes to a boil, thickens heavily and is smooth. reduce the heat to low and simmer for 2 or 3 minutes to remove the raw taste of the flour.
- 7 stir in the mushrooms, olives, sherry and artichoke hearts, and simmer for a minute or so longer to heat them throughout.
- 8 taste for seasoning, then ladle the sauce and vegetables over the chicken and serve at once.

Total Time: 55 mins
Preparation Time: 15 mins
Cook Time: 40 mins
Ingredients
- Servings: 4
- 2 -3 lbs chicken (breasts and thighs boneless or skinless are my favorite)
- 2 cups buttermilk
- 1/2 cup flour
- 1/4 teaspoon cayenne pepper
- salt
- pepper
- 1/4 cup olive oil
- 1 (12 ounce) bottle beer (i prefer a light amber, but any beer will work)
- 1 cup chicken broth
- 2 medium onions, cut in half and thin sliced
- 4 teaspoons minced garlic (more if you are a garlic lover like me, i use 6)
- 1 bay leaf
- 3 sprigs thyme
- 1/4 cup fresh parsley, minced fine
- 1 teaspoon cornstarch
- 2 teaspoons water
Recipe
- 1 chicken -- add the buttermilk and cayenne to a large baggie and toss in the chicken. let marinade over night or just for the day. bring the chicken to room temperature.
- 2 dredge -- mix the flour with plenty of salt and pepper and transfer to a pie plate or small pan and dredge the chicken in the flour mixture. make sure to shake off any excess buttermilk. set off to the side on a small plate or baking rack. you want the chicken to set 10-15 minutes to dry off a bit before you saute it.
- 3 saute -- add the olive oil, enough to cover the bottom of the pan and bring to medium high heat. saute the chicken on each side until golden brown. once the chicken is nice and brown, remove to a plate lined with a paper towel.
- 4 then to the same pan, add in the onion and cook on medium heat just a couple of minutes. then add in the garlic and stir well. you don't want the garlic to burn.
- 5 sauce -- deglaze the pan with the beer scraping up all the bits. then add in the chicken broth, bay leaf and thyme and reduce to medium low heat and cook for 5 minutes. check for any seasoning, remember that the chicken is seasoned and you can always re-season later. then add the chicken back in and make sure there is enough liquid. you can add a bit more chicken broth if necessary. cover and cook about 30-40 minutes until every thing is tender and the chicken is almost falling apart.
- 6 finish -- remove the chicken, thyme sprigs and bay leaf, but leave the onions and reduce the sauce on medium heat for 5 minutes uncovered. add in a slurry of 1 teaspoon corn starch and water to slightly thicken the sauce. you may need a bit more, but it is hard to say depending on how much liquid remains. thicken to a nice gravy consistency.
- 7 add in the parsley and once again check again for seasoning (salt and pepper) and then serve.
- 8 serve -- mashed potatoes or rice is perfect and sauteed spinach are my favorites. the gravy is wonderful over the chicken and spuds. enjoy!
- 9 note: time does not include marinating.
Total Time: 1 hr 20 mins
Preparation Time: 20 mins
Cook Time: 1 hr
Ingredients
- Servings: 4
- 1/4 cup melted butter or 1/4 cup margarine
- 1/4 cup olive oil
- 1 tablespoon garlic juice (your choice)
- 1/2 teaspoon granulated garlic (not powder)
- 1 pinch black pepper
- 1 pinch cayenne pepper
- 3 teaspoons brown sugar
- 1 teaspoon old bay seasoning
- prepared mustard (the yellow stuff in a jar)
Recipe
- 1 prepare the meat:.
- 2 trim the roast leaving just a little fat on it.
- 3 prepare the meat:.
- 4 mix all the ingredients above except the mustard. bring mixture to a boil then let cool stirring every few minutes to release the seasonings.
- 5 draw mixture into an injector and inject the roast putting the needle as close to the center of each muscle as you can (doesn't have to be perfect). rub the outside of the roast with mustard then sprinkle a little old bay seasoning all over it.
- 6 put the roast in a zipper lock bag or in a covered bowl. put it in the fridge overnight (at least 8 hours).
- 7 light the pit and get a nice hot fire going. add a bunch of soaked hardwood chips to the fire. put the roast right over the fire. let the roast get dark brown all over. take it off the fire and put it in a covered pan. use a disposable aluminum pan if you're going to finish it on the pit.
- 8 note: you have a choice here, you can finish it on the pit, or, in the oven. what's nice about this is that you can take care of the browning, remove it, and continue to barbecue other things.
- 9 in the oven, set the roast in a pan and broil it until the browning completes.
- 10 now, here's the juiciness trick. add about 3/4 cup of water to the pan, or, keep enough water in the pan to cover the bottom. cover it well with aluminum foil and, on the pit, set it off to the side away from the fire. note: the heat should be at least 275ºf in this section of the pit. check the water content every half hour and flip the roast each time. in the oven set the temp to 275ºf and do the same.
- 11 when is it done? use a meat thermometer and test the thickest part of the roast, 160ºf is where you want it. here's where you have a choice. you can take it out and slice it now, or, continue to let it cook. if you continue to let it cook the muscle sections will begin to pull away from each other, and become more and more stringy. it is more apt to be dry so you must baste it from here on out. if it gets too dry you won't get the moisture back in the meat immediately, you'll only have dry meat in a sauce.
- 12 as you slice it dredge it in the liquid, or just leave it in the liquid. taste the liquid to see if it needs any seasoning.
- 13 after the first few taste testers visit be careful with the knife so you don't wind up with additional finger food.

- 4 lbs boneless skinless chicken thighs (i prefer thighs, but depends if you like or dark meat) or 4 lbs boneless skinless chicken breasts (i prefer thighs, but depends if you like or dark meat)
- 2 lbs smoked sausage
- 2 medium onions, chopped
- 8 chicken bouillon cubes

- 3/4 cup vegetable oil

- 1 (16 ounce) bag frozen okra (chopped, if desired)
- 2 cups rice
- water
- salt
- pepper
- cajun seasoning
- garlic powder
- gumbo file (zatarain's)
Recipe
- 1 place chicken in large gumbo/stock pot, fill with water just to cover chicken well, boil til done. while chicken is cooking, cut up sausage into rounds, then cut rounds into quarters. brown sausage in a skillet, drain on paper towels. chop onions. remove chicken, cut up into small pieces. dissolve bouillon in chicken broth. add soup to broth, continue to simmer, add more water as needed. add onions to broth. if using okra, add now. add seasonings to taste to broth. if desired, you can add diced tomatoes (like ro-tel). add chopped chicken and sausage to mix. continue to simmer, covered.
- 2 now to make the roux: this is like making gravy - use remaining sausage drippings, add oil and heat in skillet. sprinkle flour into oil, stirring constantly, until all added and mixed well. you may have to add more flour to get the right consistency, should spread slowly back out into pan when stirring/scraping the mixture. stir constantly, do not let it burn. cook until it is the color of dark peanut butter. remove from heat. slowly scrape the roux mixture into the slowly boiling gumbo mixture, stirring as you add it, and scraping the bottom of the gumbo pot for roux that settled to the bottom. be careful as it will steam up quite a bit. stir constantly until all roux thoroughly dissolved into gumbo. let simmer for 30 min to an hour, stirring occasionally.
- 3 serve over cooked rice.

Ingredients
- Servings: 4-5
- 3 gallons water
- 5 ounces salt (to taste)
- 2 ounces cayenne pepper
- 2 onions, medium yellow cut in half
- 1 head garlic, cut in half, across
- 3 lemons, thinly sliced
- 1 cup seasoning, frank davis complete seafood boil
- 20 potatoes, red, small, whole
- 5 ears corn, not frozen, halved
- 5 lbs shrimp, 26-30 count, washed, heads on
- 10 lbs ice
Recipe
- 1 combine and prepare ingredients.
- 2 set up a high pressure burner, propane tank, and a 40 quart/10 gallon pot.
- 3 (i have an old miller lite keg,16 gallons, with the top cut out, and an old ford hub cap to cover the hole, that i use.).
- 4 add the water to the pot and bring it to a roiling boil.
- 5 when the water is ready, drop in the salt, cayenne pepper, onions, garlic, lemons, frank's seafood boil.
- 6 boil together all the seasonings ingredients for about 15 minutes to create a rich seafood-boiling stock.
- 7 put the potatoes in the pot, let the water come back to a boil, and boil the potatoes for 10 minutes.
- 8 after 10 minutes, put the corn into the pot, let the water come back to a boil, and boil them for 5 minutes.
- 9 this technique is known as "back-timing" and is used to make sure every ingredient in the pot comes out perfectly "at the same time".
- 10 now it's time to add the shrimp. put them all into the pot, stir them around briskly (i have a small boat paddle -perfect for this and you don't burn you self) let the water come back to a boil, and boil them for exactly two minutes. when that happens: immediately turn off the fire, remove the pot from the hot burner grate, and drop into the pot - evenly over the shrimp (which at this point will all be floating) the bag of ice. you will notice at this point that all the shrimp will immediately sink to the bottom of the pot! this is when they start picking up the seasoning (that doesn't happen while they are boiling).
- 11 now let the shrimp "soak" in the spicy water for at least 12 minutes. after that time, you can begin sampling them, like every 5 minutes or so afterwards, until they "spitefully" and perfectly suit "your" taste.
- 12 all that's left to do is to spread newspaper out on the table, remove all the shrimp from the pot, drain them thoroughly, then place them on the newspaper right down the center of the table, along with the cocktail and remoulade sauces.(see my red sauce for boiled shrimp- knock your sox off - but you can still eat the shrimp).
- 13 mangia! welcome to summertime in the backyard!
- 14 this recipe can be doubled while still maintaining both the flavor and seasoning intensity. you can use a natural gas hookup to boil seafood in your back yard, but propane creates a hotter flame and brings the water to a boil much faster.
- 15 whenever you buy a new propane tank assembly specific for boiling, make sure you get one with a "high pressure regulator." the low pressure kind won't give you the intensity of heat you need to boil volumes of water.

- 2 teaspoons paprika
- 1/2 teaspoon salt

- 1/4 teaspoon celery salt
- 1/8 teaspoon pepper
- 1 dash cayenne
Recipe
- 1 first of all, preheat your oven to 425 degrees.
- 2 then, toss all of the dry ingredients into a gallon-size ziploc bag and shake to combine. the measurements there for the seasonings are guidelines--feel free to alter them as you wish, or measure them in your palm and skip the measuring spoons altogether. so long as you start with approximate amounts of the bread crumbs, flour, and parmesan, you can't really go too far wrong.
- 3 then, cut your potatoes into wedges--i generally get about 8 wedges from each potato, but the important thing is not the number, but that they're more or less evenly sized, so they all cook at the same rate.
- 4 dunk your wedges in the melted butter, then shake them, a few at a time, in the parmesan mixture, and arrange on a greased or parchment-lined cookie sheet. stand them up with the skin side on the bottom if you can, but if they want to lay on their sides instead, that's fine--just flip them halfway through the cooking time.
- 5 if you have any leftover butter, drizzle it over top of the potatoes before you pop them into the preheated oven. or don't, if all that butter scares you.
- 6 bake for about 35 minutes or until they're tender and browned,.

Ingredients
- 3 cups garbanzo beans (chickpeas)
- 1/2 cup parsley
- 1/4 medium onion, roughly chopped
- 3 garlic cloves, quartered
- 1 egg
- 2 tablespoons lemon juice
- 1 teaspoon ground coriander
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1/3 cup flour
- 1 teaspoon baking powder
- salt
- pepper
Recipe
- 1 preheat your oven to 400 degrees and spray a baking sheet lightly with cooking oil.
- 2 combine all ingredients in list from the beans through cumin in the bowl of your food processor. process until combined but still chunky (not smooth!).
- 3 add flour, baking powder, and about 1/2 tsp of salt and a few grinds of pepper. pulse just to combine so that you cant see the flour. take a small taste (if you don't mind raw egg). adjust spices and salt if desired.
- 4 if seasoning is fine with you, transfer mixed contents into a clean large bowl. you're ready to make your falafel balls. i like to do this by portioning first with an ice cream scoop that has a scoop "release" lever--works perfectly! i portion into 12-14 blobs onto my baking tray, then with clean hands lightly roll the blobs into something more like balls (they're sticky, so don't obsess over it). if you prefer "flat" falafel to "balls": once you've shaped the portions, just press down a bit to flatten.
- 5 bake for about 20 minutes, or until the bottoms are golden brown and the tops are just beginning to turn golden.

Ingredients
- Servings: 4
- 1/2 cup mayonnaise
- 1/2 cup italian dressing
- 1/4 teaspoon garlic powder
- 1/4 teaspoon italian seasoning
- 1/2 teaspoon kitchen bouquet (brown seasoning sauce)
- fresh parsley, chopped
Recipe
- 1 in a medium bowl, mix together the mayonnaise, italian dressing, garlic powder, italian seasoning, and kitchen bouquet.
- 2 place the chicken in the marinade.
- 3 cover and marinate in the refrigerator for 20 minutes.
- 4 preheat oven to 350 degrees fahrenheit.
- 5 shake off the marinade from the chicken; discard excess marinade.
- 6 place the chicken in a baking pan coated with non-stick spray.
- 7 bake for 15 minutes or until the chicken is fork-tender and no pink remains.
- 8 sprinkle with parsley before serving.
- 9 note: this is great grilled or broiled too.
- 10 libby's notes: yes it really does cook this quickly--surprised even me. when i make it next i'm going to freeze the chicken in the marinade. i think there's enough dressing to keep the mayonnaise from separating too badly but since the marinade is discarded anyway, it shouldn't make much difference.

Preparation Time: 35 mins
Cook Time: 45 mins
Ingredients
- Servings: 4
- 2 artichokes
- 1/2 lemon, cut in wedges
- 3 tablespoons unsalted butter
- 1/2 cup diced onion
- 1/4 cup chopped green onion
- 1 tablespoon minced garlic
- 1/4 teaspoon chooped fresh thyme leave
- 1 cup fine dry breadcrumb
- 2 tablespoons chooped fresh parsley leaves
- 1/2 teaspoon lemon zest
- 3 tablespoons finely grated parmesan cheese
- 2 hard-boiled eggs, peeled and finely chopped
- 1/2 cup finely ground fully cooked country ham
- 1/4 cup extra virgin olive oil, plus
- 2 tablespoons extra virgin olive oil
- salt
- fresh ground black pepper
- lemon wedge, for serving
Recipe
- 1 bring large pot of salted water to boil. preheat oven to 400 degrees.
- 2 cut stems from artichokes to leave a neat, flat base. lay each artichokes on its side, and cut away the upper one third with a sharp knike. with kitchen shears, remove the prickly leaf tips from each remaining leaf. rub the cut sides and bottom with a lemon wedge, squeezing lemon juice onto the cut areas and set aside.
- 3 place prepared artichokes and the lemon wedges in the boiling water and simmer, partially covered, until the bottom is tender and can be pierced with a sharp knife and an outer leaf pulls out easily, about 25 minutes. drain the artichokes upside down in a colander.
- 4 while the artichokes are cooking, heat the butter in a small skillet over medium heat. add the onions and cook until softened, about 4 minutes. add the garlic and thyme and continue to cook for 30 seconds. remove from the heat and stir in the bread crumbs, parsley, lemon zest, parmesan, chopped eggs, ground ham, and 1/4 cup of the olive oil. mix well and adjust seasonings with salt and freshly ground black pepper.
- 5 when the artichokes are cool enough to handle, press the leaves gently back so that the artichoke opens to reveal the inner choke and prickly leaves. pull out the cone of undeveloped leaves and gently scrape ou the choke with a spoon so as not to damage the heart.
- 6 gently pull the leaves outward from the center until the leaves open slightly. fill the artichoke cavities with bread stuffing, and pack a little bit into the space between the leaves. place the artichokes in a baking dish and drizzle the tops with the remaining 2 tablespoons of olive oil. pour 1/2 cur of water into the bottom of the dish. bake until the artichokes are golden brown, and the bread crumbs develop a nice crust, about 10-15 minutes. serve warm with additional lemon wedges, if desired.
