Zesty Cheesy Chili Mac

Ingredients

  • Servings: 6
  • cooking spray
  • 1 (8 ounce) package elbow macaroni, cooked
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 pound lean ground beef
  • 1 teaspoon kosher salt
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (1.25 ounce) package chili seasoning mix
  • 1 (24 ounce) jar ragu® old world style® traditional sauce
  • 1 (11 ounce) can mexican-style corn, drained
  • 2 cups shredded mexican blend cheese, divided
  • 1/2 cup chopped fresh cilantro

    Preparation Time: 20 mins Cook Time: 15 mins Ready Time: 35 mins

  • preheat oven to 350 degrees f (175 degrees c). lightly spray a large, deep casserole dish with cooking spray.
  • cook pasta according to package instructions.
  • while pasta cooks, melt butter in large, heavy-bottomed skillet; add onions and saute for 5 minutes. add ground beef and cook until no longer pink. add salt, tomatoes, chili seasoning, and ragu® old world style® traditional sauce. stir to combine and cook over medium-low heat for 5 minutes or until ready to add to pasta.
  • drain pasta and return to pot. stir in corn and 1 1/2 cups of cheese; mix until evenly combined. stir in the chili. pour into the casserole dish and top with remaining cheese. bake until hot and bubbling, about 15 minutes.
  • top with cilantro before serving.
