  • 1/2 pound cubed cooked chicken

  • 2 cups chicken broth
  • 1 teaspoon dried thyme

  • in a skillet over medium heat, combine red , onion, garlic, and thyme. bring to a boil, and cook until volume is reduced by about 1/4. set aside, and allow to cool.

  • bring a large pot of lightly salted water to a boil. cook lasagna noodles in boiling water for 8 to 10 minutes. drain noodles, and rinse with cold water. in a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • preheat oven to 375 degrees f (190 degrees c).
  • to assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. arrange 6 noodles lengthwise over meat sauce. spread with one half of the ricotta cheese mixture. top with a third of mozzarella cheese slices. spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup parmesan cheese. repeat layers, and top with remaining mozzarella and parmesan cheese. cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • bake in preheated oven for 25 minutes. remove foil, and bake an additional 25 minutes. cool for 15 minutes before serving.

  • 1 (1 ounce) packet taco seasoning mix
  • 4 cups cooked rice

  • 1 (15 ounce) can kidney beans, rinsed and drained (optional)
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup salsa
  • 1/4 cup sliced kalamata olives

  • preheat oven to 350 degrees f (175 degrees c). prepare a casserole dish with cooking spray.
  • heat olive oil in a skillet over medium-high heat. saute onion and garlic in hot oil until the onion is tender, about 5 minutes; add ground beef and continue to cook while breaking beef into small pieces with a wooden spoon until the beef is completely browned, 5 to 7 minutes. season beef mixture with the taco seasoning mix.
  • stir beef mixture, rice, vegetables, kidney beans, 1 cup cheddar cheese, salsa, and olives together in the prepared casserole dish. sprinkle remaining cheese over the mixture.
  • bake in preheated oven until the cheese is melted and the dish is hot in the center, about 30 minutes.

  • 1/2 pound cubed cooked chicken
  • 1/2 pound cubed smoked sausage
  • 2 (14.5 ounce) cans crushed tomatoes, with liquid
  • 2 cups beef broth
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 teaspoons seasoning
  • 2 cups uncooked white rice
  • 1/2 pound salad shrimp

  • heat a large pot over medium-high heat. add bacon, and cook until crisp. remove bacon pieces with a slotted spoon, and set aside. add celery, bell pepper, and onion to the bacon drippings, and cook until tender.
  • add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. season with thyme and seasoning. bring to a boil, and add the rice. bring to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.
  • stir in the shrimp and bacon just before serving, and heat through. if you use uncooked shrimp, let it cook for about 5 minutes before serving.
