Italian Chicken

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 , each chicken breasts, thighs, legs- all skinned
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 4 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 lb mushroom, sliced
  • 16 ounces italian plum tomatoes, drained and chopped (reserve juice)
  • 8 ounces tomato sauce
  • 8 ounces chicken broth
  • 1 teaspoon fresh parsley
  • chopped pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/4 cup dry red wine
  • 1/4 cup kalamata olive

Recipe

  • 1 dredge chicken in flour.
  • 2 in large skillet or dutch oven, brown in olive oil until golden. remove chicken from pan and sauté onion, garlic and mushrooms.
  • 3 stir in tomatoes, sauce, broth, seasonings, olives, wine, and 1/4 cup reserved juice. cook a few minutes to blend. return chicken to skillet.
  • 4 cover and simmer 45 minutes, or until chicken is very tender.
