Herbed Lamb Medallions

Ingredients
- Servings: 6
- 1 1/2 lbs lamb tenderloin
- 2 tablespoons margarine, melted
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/8 teaspoon pepper
- 1/8 teaspoon cayenne
- 1 tablespoon honey
Recipe
- 1 cut lamb into 1/2-inch slices and pound to flatten.
- 2 combine butter and garlic powder, brush over lamb. combine seasonings and sprinkle over top.
- 3 place in 2 greased cookie sheets and broil 4-6 inches from the heat for 5 minutes. turn and broil 3 minutes longer.
- 4 brush with honey and broil for another minute or until meat juices run clear.
